Unicorn cakes

The one-horned wonder has clearly taken over the ‘gram. Full of colour and whimsy, what’s not to love? We pick out the island’s best home bakers who clearly have the know-how when it comes to capturing this elusive creature.

 

1. Zizou Cake Boutique

Working under her nickname, Zizou, Azizah Mohamed is the master of creating unicorn treats. From cakes, cupcakes to macarons, her unicorn creations are demure, featuring the magical creature with golden spiral horns, flowing manes made of buttercream, and heavy lashes. Her buttercream cakes have been seen at sorts of events — birthdays, weddings, and corporate parties. She makes everything from scratch, including the vanilla buttercream icing!

Try her chocolate cupcake with vanilla sea-salt caramel. Smooth and buttery, and bursting with flavour.

2. The Cakesmith

Erik Feir-Sim isn’t your average home baker. The tattooed personal trainer also co-hosts treks in Nepal and Manaslu. But he also pipes out unicorn cakes in creative flavours. His inspiration is “Lady Gaga as a unicorn!”, he says. Topped with sugar paste flowers, his cakes pack a bold punch. The chocolate, vanilla and almond cake we taste-tested was luxuriously rich.

Other flavours on offer include Pandan and Gula Melaka. We also adore the fact that he loves chatting with and meeting his clients, in order to customise their cakes to and make them patisserie-perfect.

3. Sweets & Spatula

Lynn Quek has been churning out buttercream unicorn cakes and cupcakes since she quit her job as a flight attendant and became a mother of one. With all the baking she does, her sister-in-law jokes that Ms Quek’s natural perfume is now butter. Her experience has led to her running workshops for brands like Anna Sui and Deloitte & Touche.

A stickler for quality ingredients, she uses the best ingredients like French butter and Nielsen-Massey Vanilla for her creations. This makes her cakes really sing. We tried her Valrhona Chocolate and Vanilla Swiss Meringue Buttercream cupcakes. The chocolate has a deep intensity that worked perfectly with the creamy frosting. It’s dream-come-true delicious!

4. Strictly Pastry

The craftsmanship of Hannah Wong at Strictly Pastry is positively state-of-the-art. And you can bet that if she can whip up this sky high creation complete, with edible wafer petals, she can easily make you a unicorn cake.  Baker Hannah Wong recently started taking orders again after a break, and we are so relieved that she’s back to working her magic once again.

5. Bunny Bakery

Andrea Lee started Bunny Bakery in May 2017, and quickly found a niche in creating wholefood cakes. Cashews replace cheese in cheesecakes, and ingredients like legumes and sweet potatoes for dessert stand in for flour in some creations. In fact, her stunning cakes are often gluten-free, and contain no eggs, dairy, refined sugars, preservatives or artificial colourings. The certified raw food chef says she wants us to rethink dessert — and it’s clearly working as she has converted all sorts of skeptics with her diabetic-friendly cakes and creative bakes.

We love her hand-painted cakes and are crazy for this unicorn-palette cake — a Raspberry White Chocolate Cheesecake with Almond Coconut crumble and White Chocolate “horn”. Expect piquant, creamy masterpieces that are filled with flavour, sansany cloying sweetness. This is delicious and nutritious decadence, done right.

6. Swabakes

Swathi Sathish began Swabakes because she was a vegetarian who just couldn’t find a tasty eggless cake. The avid dessert fan-turned-baker set out on her own mission of creation. She trawled through recipes, fine-tuned her buttercream cakes and cupcakes, and burst onto the scene to rave reviews in 2016. We spotted the above cake palette on her social media that’s the perfect answer to the unicorn theme.

She has an extensive and inventive flavour list on offer, including Ondeh-Ondeh, Chocolate with Marmalade and Lavender, and a decadent Chocolate with Caramel and Nutella. Drawing from her heritage. she also works with typical Indian flavours, like Pistachio with Rose and Cardamom, Masala Chai with Spiced Buttercream and Indian Halwa Carrot cake with Saffron Buttercream. Our taste test guarantees this — you won’t be able to tell that these are eggless bakes. Amazing stuff.

7. Seasalt Chocolat

Super adorbs! Jasmain Chow of Seasalt Chocolat created these unicorn macarons, and we are in love. The diploma graduate from Cordon Bleu London specialises in customised cakes such as entremets, buttercream cakes, and fondant cakes. She also offers dessert packages featuring classic petit fours, including macarons, tarts, choux puffs and creme brûlée. Her offerings have been served at the Wonderboy movie press conference, as well as to Jay Park during his visit to Singapore.

If you’re looking for something sweet and pretty, Jasmain can take the reins on this one!

8. Lalahomebakes

Shirley Tan’s husband initially refused to get an oven for their new home. We’re glad he eventually lost that fight, because she started up her home bakery in July 2017.  Her husband, by the way, became her biggest fan (who also serves as a critic).

Specialising in customised buttercream cakes, Shirley has whipped up many unicorn bakes, and continues to expand her repertoire of pretty and fluffy fantasy creations. Check out her buttercream floral wreath, as well as isomalt sail cakes. Her colour palette runs from muted pastels to captivating splashes and swirls.
